Inspired by Pla Duk Yang Sadao Nahm Pla Waan, a Thai classic known for its balance of smoky, sweet, salty, and bitter flavours. Australian tiger prawns take the place of catfish, while chicory leaves offer a clean, delicate bitterness in place of traditional neem flowers. Finished with nahm pla waan, fried shallots, and garlic chips.
