One such blend is the Colombian coffee produced by Wilton Benitez, who uses experimental fermentation processing techniques to create a sought-after fruit-driven coffee. This specific lot was washed in ozonated water, sterilised with ultraviolet light, pulped then fermented with yeast for 96 hours. It was then dried for 46 hours before being matured for 15 days in airtight bags. The result is a truly exceptional cup of coffee that is available in-store now.
