I proudly present a new musical concept: “Aussie Baul Folktronica.”

I have three death anniversaries. The fourth one will be the last. 😂😂

Once upon a time, I used to work as an epitaph writer for the dead. Many didn’t have anything to write, so I used to write for them.
Many asked me, “What will be written on your grave?”

I used to say, “Remember me…!!! ”

Time went by. Life went by. And I have written over 6,000 songs. Every song is a life story….

Now I think I have something to gift to the human race.

And a book with 9 chapters, which I wrote over the last 37 years……

My dad would have been proud. He thought writing songs and trying to sing was for clowns 😂😂😂😂 (1990s middle-class dad 😊)

(Tomorrow, our shop is open 10–3 / 4–8:30.)

And I am close….

Many of these lyrics made me cry in the dark when I wrote them and when I thought of them and me and us.
Many of these songs made me cry when I listened to them after the studio touch..
Many made me laugh, dance, and taught me how to dream….
I wrote sadness with the music of happiness …

The singer’s voice is mine. Every song, I sing when I drive, when I work. I record, and then I mix and tweak with some help from software, apps, AI etc. A lot of work —😢

For those who don’t know, I used to be a professional DJ and music composer. I did many things - even worked as a … (?!)
Another side of Simon 😂😂

I will start uploading all the songs I have written, sang, and created over the years to Spotify soon…. If I make money from them - I will use them to publish my book - the price of the book will be a big surprise ..

Hopefully, the human race learns something from them….

In another post, I will tell you what all those songs are about.

Ok. We are at it again . We have two lads a try - but they are not what I am looking for - and yes - I am strict when it comes to food and taking ownership of that money what customers gives us with trust — also this time - we won’t be even interested in anyone who are not living north side - when people desperate for jobs they take what they get - does commute for hours and then as soon as they find something closer - they quit..
then what about all the effort we put to train ?!

So this time we are looking for a chef or cook and an allrounder - but need to have their own transportation.

COOK / CHEF / EXPERIENCED ALL-ROUNDER WANTED 👨‍🍳

We’re looking for 1 experienced hospitality person around the Two Rocks / Yanchep area.

This is not a junior or training position. We need someone who can genuinely handle a busy food truck environment.

💰 $30–$40/hr, depending on proven skill and experience. Cash payment can also be arranged lawfully.

Please be honest about your experience 😜. A resume can say anything, but a short practical trial usually shows very quickly what someone can actually do. No need to oversell yourself 😂.

⏰ Mostly afternoons/evenings, finishing around 9:30pm
🕒 Around 25–35 hrs/week

For the right person, this could grow into a full-time role around $80K + super, with possible bonuses and profit share.

The role includes:
• Orders & customer service
• Fryer / kitchen work
• Prep
• Cleaning
• General all-rounder duties

Nobody here is above cleaning. If the boss can scrub floors after 30+ years as a chef, we all can 😜.

Our priority is simple: customers give us their hard-earned money, so we give them honest value, quality food and good service in return.

You must be reliable, fit for work, have your own transport and be willing to travel with the truck. Longer-distance travel may be compensated or pickup arranged.

We also can skilled chef or cooks with sponsorship - but we will only offer it if we see you are an asset for Australia - and you intend to continue in this profession.

However we prefer local - but we also know it’s hard to find a good cooky or chefy that cares about honesty value and quality at the same time .

Our chefs and staff from Southside don’t wanna do the long trip and such- so now until we find a good team member - I will work alone .

Also it is worth noting when we do long distance event - pay can go up to $100 an hr depending on what revenue we are earning .

We also have bonus system - if our daily revenue goes above 2.5k - staff on shift gets extra payment per hour - and after that every $500 revenue increase on the day - gives more increment to pay as well.

IMPORTANT UPDATE FOR BUTLER this week - THOR’s hammer update

Today our truck is closed (baby duties) shop is open today , tomorrow .. (shop has a great special today ) -

4x burger , chips , 2 drinks - $29.99

this coming Friday we will not open in butler (but next Friday we are coming to event with some bomberstic specials ) (reason - I need to stay close to my kids - due to Mrs being away - also Friday we will have Thor’s hammer - and two rocks are better to launch them than butler - because butler is quieter than two rocks )

Our “water aged” Thor’s hammer platter will be priced at $150
(This is a massive feed )

The picture is a new item we are creating - a kiwi inspired fried bread in ghee with lightly spiced potato filling , and then topped with bbq brisket and more - we are not sure what to call it yet -

Today we are going to try this out at banksia grove — $18 per tray -

However - in hospitality industry - most times - when people uses someone else’s idea as inspiration to create a different variation - most people don’t say much about who did it first or from where they saw it and got inspired by … funny — isn’t it !!.

FULLY UNCUT. FULLY RAW. NO SUGARCOATING.

How much does it cost to take a franchise from us?!

A new concept, where the franchisee can become financially more successful than the franchisor. Imagine that! 😂

But at the end of the day, it is entirely up to the franchisee.

We can provide the guidance, knowledge, systems and full back-end support. But if the person running the business refuses to put in the effort required to make it prosper, that business will fail.

Simple as that. No sugarcoating.

And believe me, we have tested this before.

We once gave someone an opportunity without that person having to give a single cent for support and such.

And what happened?

Instead of putting in the effort to build his own business, he went to work for someone else in a pizza shop while employing a cook to run his own business! 😂

Imagine earning $40 an hour working for someone else while paying a chef $30 an hour to run your own business. (Just an example. There is much more to that story!)

Our concept is simple:

You put in the effort. Have your own van or shop - We provide the knowledge, guidance, systems and back-end support, all food supply which makes our brand different than others in the market - a wider access to a great customer base across wa . And you can save thousands from chef wages and more - but do remember - we don’t compromise with our quality and standard which we have kept consistent for last 8 years .

Because under our concept, you get to keep 100% of your earnings.

But don’t confuse opportunity with guaranteed success.

If you don’t do the work, don’t expect the rewards.

Now, I would also like to put something on the public record.

We hold the trademark.

And yes, we are aware that a few people in other parts of Australia are using our name.

To those individuals, remember that there are laws protecting trademarks and intellectual property.

We understand that some of you may not be financially well-off, and out of respect for your circumstances, we have chosen not to pursue legal action so far.

But here’s the interesting part.

You never even had the basic respect or courtesy to approach us and ask for permission.

So my question is:

If you cannot show us respect, do you deserve to continue receiving ours?

We have deliberately chosen a different path.

When 100 people with limited financial resources unite through ethical honesty, hard work and mutual respect, all 100 can have an opportunity to prosper.

We do not have to follow the footsteps of “cowboy capitalism,” where only a privileged few become wealthy while everyone else does the hard work.

We can create our own path.

Will it be easy? Absolutely not.

Will everyone succeed? Absolutely not.

But is it possible? Absolutely YES.

Because a genuine opportunity should not exist only to make the person at the top richer.

It should also give the people doing the actual work a fair opportunity to build their own financial future.

Ethical honesty. Shared opportunity. Individual responsibility.

No shortcuts. No free rides. No guaranteed success.

Just an opportunity, the right support, and your own willingness to work for it.

Firstly - shop is open - truck is close - truck opens tomorrow (keep an eye for tomorrow morning post )

Second - from 15th October to 24th October - we do not gurantee our shop or truck opening - so check our socials before heading towards us .

Reason - mrs is flying to attend funeral and I will be with our 3 months old and 3 yrs old - so me , my chef, my adult daughter we all together will try to manage our little ones - we will try our best to operate - (truck most likely will but will stay near the area - so I can be reached if any issues )

In past we got bad 1 star review from few “entitled people “ simply for staying close (even though we published ahead ) - so this time plz don’t do it . It’s not ethical nor ethically fair to us . Google has given you an open knife doesn’t mean you are going to abuse it .

Another fun fact - we got some fake 5 star review from few ( we have their names n data) - so Google flagged our account because Google thinks I did it - but I think Google smoked crack and become dumber - because my phone etc etc linked to my account - so Google can easily see that we have nothing to do with it .

This is a dirty trick a smart segment of people uses when they want to hurt competitor business , - if you want to hurt someone - then simply use fake account to give Google review “make sure it’s 5 star “ and Google will restrict that account-

Fun fact - Google don’t do anything about fake 1 star review that we got - they won’t restrict our account for that 😂😂

Also the few that did this try to hurt us - I have spend $85 us dollar and an ethical hacker tracked down that id in Yanchep/two rocks .

So to those - simply remember - if you own a business - when we find out - we will bring the storm upon you..

Simon don’t believe in forgiveness - Simon believe - forgiveness must be served with justified consequences -

Because god is not merciful - god is merciful with consequence - if god was unconditionally merciful - then we human would have still be in heaven or where Adam and Eve lived 😂😂

So at 7pm the gentleman comes and says - give the food to someone -

I offered the money back , even though it was cooking on the grill and he was very polite and nice - not sure what we did wrong - we had 15 order came in within 10-15 minutes before him ..

So dear gentleman - not sure what happened and u r ok ..

And if anyone hungry and don’t have money - plz come by and have this burger on this unknown gentleman .
