We get asked this all the time:
“Do you use the good olives or the black ones?” 😂
Of course we use the good ones!
We choose to use Greek Kalamata olives, not the cheaper black olives. They cost more, but Mario believes flavour and quality matter most when making a great pizza.
And we go through a lot of them!

🍕❤️ THIS WEEKEND, EVERY ST PETER’S SPECIAL HELPS SUPPORT TELETHON!
Telethon has always been a cause close to our hearts, and Mario’s Pizza and our family have proudly supported this wonderful cause for many years.
This year is even more special, with one of the 2026 Little Telethon Stars, Olivia, attending our local St Peter's Primary School, Inglewood, a school we’ve had a wonderful relationship with for many years.
As you can see from our photos, Mario and his family have even had the pleasure of visiting the school and showing the children how we make our pizzas!

A little pride goes into every pizza! 🍕
At Mario’s Pizza, we’re proud of the pizzas we make, but we’re just as proud of the people who make them!
These two staff members are both carrying on a bit of a family tradition. One has followed in the footsteps of his two older brothers who worked with us years ago, while the other has two siblings who still work with us today!
Most of our staff start out learning the ropes in the kitchen before working their way up to making pizzas. Over the years, we’ve watched many of them grow up and become part of the Mario’s Pizza family.
We take great pride in every pizza we make. From fresh ingredients to carefully spreading our generous toppings evenly across the pizza, we want every slice to be just as good as the next!

Every Mario’s Pizza starts right here! 🍕
Mario personally makes every batch of dough fresh in house each day, using locally milled flour made from Western Australian wheat and our traditional old school mother dough technique.
At the heart of our pizza dough is our mother dough, known in Italian as lievito madre. Ours is believed to date back to the 1960s, making it much older than both Mario and Mario’s Pizza!
It is carefully maintained and refreshed each day, allowing it to continue maturing and evolving with every new batch.
Working with mother dough is not as simple as measuring ingredients and following the same recipe every day. Because it is constantly evolving, Mario relies on years of experience and judgement to understand exactly what the dough needs from one day to the next.
A recipe can give you ingredients and measurements, but it cannot replace decades of hands on experience or a mother dough with this much history.
This traditional technique also allows us to use only a very small amount of fresh yeast, helping our dough develop greater depth of flavour, a better aroma and the texture our pizzas are known for.
For us, this is what traditional old school Italian cooking is all about. Respecting the process, preserving the knowledge and heritage passed down through generations, and taking the time to do things properly.

HAPPY FATHER’S DAY! ❤️🍕
With Father’s Day this weekend, we’d like to wish all the dads, granddads and father figures out there a very Happy Father’s Day!
We know plenty of families will be celebrating across the whole weekend, and with footy finals on the TV as well, we’re expecting a very busy Saturday night and Father’s Day Sunday.
Mario has been busy behind the scenes making plenty of fresh dough and getting everything ready so we can keep the pizzas flowing all weekend! 😂🍕
There’s something pretty special about seeing dads and their kids sharing a pizza together, and we’re very grateful that so many families choose Mario’s Pizza to be part of occasions like this.

❤️🍕 WHAT A THURSDAY NIGHT! 🍕❤️
Tonight was honestly one of the busiest Thursday nights we can remember at Mario’s Pizza, and we just want to say a massive THANK YOU to everyone who supported us.
With the football on, the weather outside and everyone seemingly deciding it was a pizza night at the same time, we absolutely copped it!
And judging by tonight’s result, we know not everyone will be happy 😫 Hopefully our pizza helped soften the blow! 🍕
After only an hour of opening, we were already running out of pizzas and had to make an additional dough mix just to keep up. We also called in 3 extra staff members, with one of them jumping in to do deliveries for the very first time because of the huge volume of orders.
We tried our hardest to take as many orders as possible, but eventually reached capacity and had to temporarily pause online ordering and switch the phones off. We would rather stop taking orders than rush pizzas out and compromise on quality.
We sincerely apologise to anyone who couldn’t get through, missed out or had a longer wait than usual. We also really appreciate everyone who was patient and understanding with us.
A quick note for pre-orders too: during extremely busy periods, requested times are a rough estimate rather than a guaranteed exact time. We always do our best to get everything out as efficiently as possible while still making every pizza properly.
To everyone who ordered, waited patiently and supported our little family business tonight, THANK YOU. ❤️

THIS COOL DUDE TAKES US BACK NEARLY 20 YEARS 😎
Back then, he was a very young teenager and one of our junior staff members, hard at work preparing our ham in house.
Today, he is still part of the Mario’s Pizza family, just like so many young people who have started their working lives with us over the years.
We’ve also been lucky enough to watch multiple generations of customers grow up with us, with many now bringing in families of their own.
Throughout those years, we’ve never stopped learning or evolving. We continue to use our experience to refine the way we work and make our pizzas even better, while preserving the things our customers have always loved.
We’re proud that people still appreciate the same generous, old school style of pizza they remember from growing up. We still process and prepare our own ingredients in house every day and make all our dough fresh using our old school mother dough recipe, just as we did back then.
KEEPING IT OLD SCHOOL IS COOL because some traditions are worth keeping. 😎🍕👌🏼
