Four new wines just landed on our list.
GRM — Grenache and Mataro co-fermented from biodynamic vines in McLaren Vale.
CINS — Cinsault, one of the least planted grapes in Australia. Light, bright and completely its own thing.
NDV — Nero d’Avola aged six months in beeswax-lined clay amphoras. Nothing else like it.
OMENSETTER — Single vineyard Shiraz, two years in French oak, 1,200 bottles made.
All from Brash Higgins in McLaren Vale. All on the list from tomorrow night.

Why “Stanley”?
Bistro Stanley is named after Stanley Street in Central, Hong Kong — a street in one of the busiest districts in the world, lined with restaurants serving food from everywhere. French bistros, Italian trattorias, Korean barbecue, Japanese izakayas, old Cantonese dai pai dongs. One short street, the whole world on a plate.
When we built this room, we wanted to bring some of that feeling to Winthrop. The photos on our walls are from that street, that district, and the city that inspired us.

A really special afternoon at Stanley today. Brad Hickey of came in to share his wines with us.
Brad’s story is a good one. Chicago-born, he spent a decade in New York running the floor as head sommelier at Bouley — a two-Michelin-starred restaurant. Then in 2007 he came out to South Australia to help with a harvest, fell in love with McLaren Vale. He now farm his own vineyard organically and make some of the most exciting wines in the region.
We tasted through the whole range this afternoon and there’s something delicious coming to our list very soon. Watch this space. 🍷

We’re back Wednesday.
Coffee from 7am. Breakfast from 8am. Lunch from 11am, through to 2:30pm. Bistro dinner from 5pm, house-made pasta sauces, surf and turf, Tuscan salmon, the seafood medley for two.
Not feeling like dressing up? The $20 takeaway pasta runs Wednesday to Saturday, 5 to 8:30pm.
Bookings recommended for dinner or just walk in also welcome.

Croque Madame. Leg ham, Gruyère, béchamel sauce, sunny side up, brioche.
Smashed Avo. Smashed avocado on ciabatta, feta, red onion, fresh mint, balsamic glaze.
Fried Chicken Waffle. Golden waffle, crunchy battered fried chicken, mascarpone whipped cream, sable crumble, crispy bacon, maple syrup.
Specialty coffee poured fresh, all morning.
Coffee from 7am, breakfast from 8am. Wednesday to Sunday.
Lunch from 11am, Wednesday to Sunday.
