Let me introduce you to Wayne — the behind-the-scenes guy, aka Boss Man™. 😂
Wayne too has somewhat of a creative mind, and this week he decided he’d like to have a crack at creating a weekend special.
Now, one thing we should probably know about Wayne is that he’s about as organised as a brunch rush with no docket printer. 🫠
So naturally… he hasn’t actually gotten around to making the dish OR taking a photo of it yet.
BUT ALAS — I’m here to tell you all about it and hopefully convince you to trust the process and come try it anyway. 😂

Hot Honey Halloumi 🌶️🍯
Golden, fresh sourdough layered with silky pumpkin purée, whipped feta, grilled halloumi, a fresh rocket and pickled onion salad, toasted pepita dukkah, and two perfectly poached eggs. Finished with a drizzle of hot honey for the perfect balance of sweet, savoury and spice. ✨🍯🍳

For public transport, take the train to Perth Station and transfer to the Blue CAT bus. Get off at the stop on Lake Street, near Roe Street. Walk south on Lake Street until you reach the destination.
For driving, take the Mitchell Freeway (State Route 2) towards Perth and exit onto Newcastle Street (State Route 61). Turn right onto William Street and then left onto Lake Street. The destination will be on your left. There is street parking available nearby, as well as a paid car park on Francis Street just a short walk away.
