Paella might be Spain’s most famous dish, but it’s far from the whole story.
Spanish food is croquetas shared before anyone has decided what to order. Tortilla Española made with a handful of ingredients and generations of technique, beautiful cuts of beef, Manchego cheese, jamón Serrano…and recipes that change completely depending on where in Spain you find yourself.
Paella will always have a place at our table. We just don’t want your journey through Spanish food to end there.
