Meet the person behind the food at Cassia.

Head Chef Thomas has spent more than 20 years in kitchens, but it all started in a small village restaurant in the English countryside.

After moving from the UK to Perth, he built his career through some of the city’s most respected kitchens, picking up experience, accolades and, more importantly, developing his own way of cooking along the way.

Today, his philosophy is refreshingly simple: cook with the seasons, respect the produce and don’t add something to a plate unless it needs to be there.

At Cassia, that means working closely with seasonal Australian ingredients, building bold but considered flavours, and making plenty of use of the woodfire at the heart of our kitchen.

The result is the food we want Cassia to be known for: modern Australian, produce-driven, full of character and never unnecessarily complicated.

And behind it all, you’ll usually find Thomas somewhere near the fire.
