Welcome to our new Behind the Scenes mini series, where we’ll take you inside our production facility to show you the technology, processes and people that help deliver premium-quality Australian seafood every day
🎥 In today’s episode, Minh explains how our skinning machine works and why it’s such an important part of our production process.
By using a combination of water and ice, the fish skin grips to the machine’s rotating drum, allowing it to be removed cleanly while preserving as much of the fillet as possible
The result?
✅ Faster processing
✅ greater efficiency
✅ less waste and more of the fish being used

1. Take a train to the Glendalough Train Station.
