Mediterranean-style Snapper Bake 🍅🐟🫒
Fresh snapper fillets baked with cherry tomatoes, olives, garlic, herbs and olive oil for the perfect healthy and easy dinner 🤍
Recipe (2 servings)
• Snapper fillets
• Cherry tomatoes
• Red onion
• Zucchini
• Capsicum
• Kalamata olives
• Garlic
• Olive oil
• Fresh oregano & rosemary
• Lemon zest
• Salt & pepper
Method:
1️⃣ Preheat oven to 180°C
2️⃣ Place chopped vegetables and olives in a baking tray
3️⃣ Add snapper fillets on top
4️⃣ Drizzle with olive oil and season with garlic, herbs, lemon zest, salt & pepper
5️⃣ Bake for 15–20 mins until the fish is perfectly cooked and vegetables are tender
Simple, perfect for winter, and packed with nutrients 😋😋

Did you know you can cook frozen salmon straight from the freezer in your air fryer and have a delicious, healthy dinner ready in just 15 minutes?
Easy, healthy, no fuss and absolutely delicious ❤️
👩🍳 Recipe for 2:
Ingredients:
• 2 Salmon portions (frozen)
• 200g cherry tomatoes
• 60g olives
• Capers
• Thyme
• Spring onions
• 50ml extra virgin olive oil
• 20ml white wine
• Salt & pepper
• Your favorite spices (optional)
• Fresh parsley (optional)
Method:
1️⃣ Mix olive oil, white wine, salt, pepper, and your favourite spices to create a simple marinade
2️⃣ Chop cherry tomatoes and spring onions, then mix with olives, capers, thyme, and part of the marinade
3️⃣ Place your frozen Salmon portions in a pre-heated air fryer and cook for 5 minutes at 180°C
4️⃣ Fold baking paper into little parcels and tie the ends with kitchen string
5️⃣ Place the salmon into the parcels and spoon the tomato mixture generously on top and around it
6️⃣ Pop them back into the air fryer for another 10–15 minutes at 180°C.
Serve immediately with fresh parsley if you like 🌿
And that’s it! easy, delicious, healthy, and no mess 🙌

2. From the station, walk to the bus stop located on Jon Sanders Drive.
